Claire and Xavier fell in love with Manigod and made their dream come true there. Passionate about fine dining and a warm, welcoming atmosphere, they decided to open Le Choucas, a place where they can share their love of cooking and offer a warm welcome to their guests. Located beneath the Merdassier peak in Manigod, Le Choucas welcomes you in winter for lunch and dinner. In this authentic and welcoming setting, you can enjoy refined cuisine whilst admiring the beauty of the surrounding landscapes.
Claire learnt the art of front-of-house service and sommelier skills in prestigious Michelin-starred establishments, such as La Chèvre d’Or, Anne-Sophie Pic and Jean Sulpice. These experiences enabled her to master the art of service and food-wine pairings. Today, at Le Choucas, she offers a superb wine list, carefully selected to enhance every dish.
Xavier began his culinary career alongside Michelin-starred chef Alain Cortesi, before taking the reins at the restaurant Le Petit Paradis in Annecy, where he worked for 10 years. This experience allowed him to perfect his skills and develop a cuisine that is both indulgent and refined.
